ARROZ CON POLLO (Costa Rican rice with chicken)
Makes one serving of arroz con pollo
1/2 cup of cooked white rice
1/4 cup of chopped red pepper
1/4 cup of chopped white onion
1/8 cup of chopped celery
1/16 cup of chopped cilantro
1 cup of chopped cooked chicken breast
1/16 cup of pepper
1 tablespoon of soy sauce
Saute onions, celery, and red pepper
Add the chicken until it browns a bit
Add rice, soy sauce, pepper and cilantro
Mix all ingredients together until rice is a little toasted
